I found an 'egg' on a walk this weekend, it looked at first like a mushroom but was quite firm and rubbery, poking it with a stick made the skin peel off and inside was a semi-opaque jelly with 'something' inside looking like an embryo. It was about the size of a golfball, smooth and whiteish and half buried in pine - actually there were 2 of them. Was this a snake's egg? It was definitely organic!

That sounds like a snake egg.

Not a snake egg, they're a lot smaller than that, with liquid contents. I once had a grass snake which laid eggs about an inch long. I think you may have found an early stage in the development of a fungus, Phallus impudicus (what a name!), which is sometmes called the 'witch's egg' at this stage. Sounds like an egg that has been put in vinegar for a couple of days.  The shell rots and can be peeled off and the inside of the egg becomes jelly/rubber like.  However, none of the ones I have done have appeared to have foetuses/embryoes in.
