freezing carrots

about to hit a glut...how do you all save carrot i know about storing in sand.

So far I'm taking them from the ground as and when I need them.
I'm interested to find out how other store theirs too.

I store mine in a wooden box with a mixture of  70 parts sharp sand and 30 parts compost to stop them drying out, dont use builders sand because it dries out the carrots.
you may be a king or a little street sweeper but sooner or later you dance with de reaper.

Depending on the size I scrub off the dirt, blanch in boiling water for a few minutes, drain, cool and freeze. If large slice into smaller piecesa nd repeat as above. Can't beat home grown carrots, apart from parsnips....

I wouldn't leave them in the ground much longer as they are likely to get eaten before you get to them.

I've never tried storing or freezing them whole but you can peel, slice and blanch them and they freeze well. Carrot puree also freezes really well and is great mixed with other roots.

boxes of compost, just damp and freeze loads for soups and stews  :)

I'm with Manics - store in compost.  Tried dried sand last year too - it was successful but just far too heavy so will stick with the compost.  Freezing ok - scrubbed, sliced, vacuum packed in bags and frozen.  To cook - boiling water, in with the frozen carrots - cook for 2-3 minutes.
