Courgette Pikelets

I've used this recipe for about 20 years, in fact when my girls were small (they are mothers now) they used to complain, "Oh no not pikelets again!".
The recipe is from New Zealand and great served just with a tomato salad and wedges of lemon although we had it last night with spuds & runner beans!  You will find your own way with it eventually ~ after a glut of courgettes, but the recipe will stay with you forever!!!!
I have put alternatives in brackets which work really well.

4 med grated courgettes (any type, any colour)
4 tablespoons wholemeal flour (I used strong white plain last night and a friend of mine has used breadcrumbs)
1 tablespoon chopped parsley (easily ommitted)
1 teaspoon salt
3 ggs
3 tablespoons grated parmesan cheese (Cheddar or mixture of whatever hard cheese is in the fridge)
1/4 teaspoon garlic powder (I use about 2 ~ 3 fresh cloves crushed)
freshly ground pepper (loads of)

Method
Beat eggs with seasonings, stir in remaining ingredients.  Heat a heavy based frying pan on a moderate heat.  Lightly grease the surface.  Cook mixture in large spoonfuls for about 2/3 minutes either side.

Fabulous recipe tilts, will try it next weekend when the house will be full of hungry young chaps ;)

Do you think they would freeze?  I'm sure they would....just thinking about making up a batch for a winters day.

I think that they will freeze just fine. 
I would probably squeeze out excess water from courgettes prior to adding to other ingredients if i was to freeze, you know how courgettes are so full of water!!!!!!

I've just had some of these for my tea - they were fantastic.  My 3 yr old wolfed them too - I didn't tell them about the courgette bit til afterwards.  Definetly having those again - thanks Tilts!

Made tonite to have with supper, but added an onion and a couple of spuds so my darling wouldn't be to upset at just having courgettes!  Plus it meant I didn't have to do any other veg - teehee!  He loved them!  Excellent stuff.  I have a couple of small ones saved to drop in the toaster for my lunch tomorrow.  YUMYUM!  Thanks Tilts.
