Storing chilli's

Much to my delight I have a good crop of chilli's, Jalapeno and another type who's name escapes me.

My question to all you knowledgable folk is
1 - can I freeze them
2 - can I pickle them
3 - any other good ways to store them (have previously dried them OK)

Like the Vodka idea.

Sorry to be greener than grass but is there anything i should do apart from put the chilli's into vinegar? (like onions etc)

Hi-not really,but as with all things in oil/alcohol etc just make sure everything is below the liquid line'

You can `tart` it up as you wish-there are no rules-have fun and experiment

I've dried a few chilli's before but this year I have a good crop and wanted to try something different.

EJ The chili jelly sounds good, what do i need, ingredients and cooking ability?

Two Choices

We put them in a blender (seeds optional) and then using an old ice cube tray we made chili cubes. Once frozen you can put them all in a single bag and then add when cooking 'as required'

Here is the link to the chilli jelly recipe.  It is dead easy, and you can tart it up to your hearts content....add vodka.....add colour.....more or less chillis....I have added smoked praprika at the very end and it gives a wonderful smoked chilli jelly!

We always put a few chillis in bottle of vodka - has quite a kick to warm you up during winter!!

Like the ice cube idea.

Made jelly for the first time this year using EJ s recipe - turned out really well  :D

I have a cheapo bottle of vodka.....think I will shove a few chillis in the bottle.

Can thoroughly recommend EJ's chilli jelly - gorgeous stuff - I think my most novel use was when i had a cold a couple weeks ago & had run out of ginger to put in my hot lemon, i stirred in a generous dollop of jelly and it nuked my cold good!!!

Might try the ice cube idea, sounds good.

Having just returned from a holiday in Australia, I was very please (being a bit of a chocaholic) to be given some chilli chocolate by my son's girlfriend whilst there.
It is in the form of little chocolate drops, dark chocolate, and you don't taste the chilli until you finished eating it, and then there is a warm glow in your throat - absolutely brilliant. But a way of using chillis I never thought of!
There are no bits, and I intend to have a go at making some - I will have to experiment I'm afraid...

oooooooooooo yes.  After all, don't the mexicans use dark chocolate in their chilli sauces!?!  Never fancied the garlic farms garlic chocolate, but chilli chocolate sounds much more favourable!

Now I don't think I've grown enough chilli's at all.

Will grow more next year.
In fact must grow more of everthing next year.
