Greasy stock

I like to make stock with the chicken bones and use it in my soups but a couple of timesrecently the soup has tasted a bit greasy. What's the best way to avoid this? Less meat left on the bones?skimming the stock?

If you let it go cold and put it in the fridge the fat will rise to the top and solidify so you can remove it easily.

dont boil the stock just simmer it, if boiled the fat breaks down into smaller particles and becomes part of the stock, a good way to get rid of excess fat from a stock is to take it off the heat and add ice cubes this will solidify the fat making it easier to skim off.
you may be a king or a little street sweeper but sooner or later you dance with de reaper.

my mum used to float a piece of bread on top and then feed it to the birds  ;D

Thanks, all great ideas,I especially like the idea of feeding the birds rather than just throwing it away, particularly in this weather!
