Harvesting Kale

I have grown several plants of 'walking stick' cabbage, properly known as a type of kale. The plants are putting on nice growth and I now need to know how and when to harvest the leaves. I understand the plant is 'cut and come again' butt what extent?

Can anyone advise me please? I'd dont want it to go to waste as it is in place of proper cabbages this year!

If you want it to get to 12-14 ft you must leave the growing tip alone but any side shoots should be taken out and eaten as soon as poss...

How do you harvest it at that altitude?

The makers of walking sticks are not fussed about harvesting.

I grew it a couple of years ago, but I found the leaves tough, so used them where heavy duty cooking was required.  Shredded finely and deep fried they made excellent chinese seaweed, or shredded and stired into stews/casseroles about 30 mins before serving.  Not great in salads.  Ended up with a couple of 5 foot chunky stems, but my purple sprouting reached those heights this year!

While we're on the subject of harvesting Kale ... my Red Russian is starting to flower ... if I harvest the usuable leaves can I freeze them? and how do I do it?
