I need some ideas for stuffing a Butternut Squash

Any ideas for a tasty stuffing for Butternut Squash??  Both veggie and meaty ideas would be very welcome.

hugh f w and his guests showed some ideas last night,
as far as I can remember, it was onion, feta cheese and herbs
and another one was feta, herbs and sweetcorn,
maybe someone else saw it and can remember more  :)

I think that was right ps - not much room in a butternut squash, but you could also throw in peppers aubs etc or maybe rice or cous cous

 Tomatoes and garlic. Saw it on the telly recently. The idea was to scoop it out, (I cut it's head off, saved the 'neck' part for another time and used the top as a lid.) chuck the toms & garlic & whatever else you fancy in, replace 'lid' and bake in oven.It was very tasty. ;D ;D

Try savoury rice.

three-quater-bake your bnut squash.

boil rice with a stock cube till just undercooked, drain & discard water.

In a pan fry off a little onion & garlic, add whatever you have to hand along the lines of the below list (all cut to a simmilar size) and keep stirring:

salami/chorizo/ham cut into batons
sundried toms, chopped
olives, quatered (not many, as when hot they can overpower a dish)
black pepper to taste (not salt as you've used a stock cube)
pine nuts, whole

take the bnut out of the oven, put a few cubes of butter in the most cavernous bit.  Pile on the rice, grate on some good cheese, shove in oven till fully baked.

Eat.

You could also use pumpkin oil to fry your onions/garlic in - great flavour.

Maggie, I've been given 2 squashes - variety unknown ::) & want to play around with them with ingredients I've got....

Can't ever remember cooking squash before, so from the top.....the squash is unpeeled? Do you brush the inside/out with oil then bung the filling in? What sort of oven temp? If you leave the squash unpeeled so you score it?

And, anyone.......any other simple things to do with squash, please? I did a search, expecting pages'n'pages of recipes......and there's not ???

I used to do Jamie Oliver's Hamilton Squash recipe from his 'Happy Days with the Naked Chef' book.  Tastes great, but I wouldn't call it simple!

I tend to roast most of mine now, either plain with some herbs/spices, or I have a recipe for roast squash with goats cheese, green beans and maple syrup which is fantastic.  I'm afraid I don't know the recipe off the top of my head.  It's from the purple Crank's cookbook.  I've also done a risotto which was nice.

Alishka, wot I did was this, not peeled, top cut off etc. (as before) scooped out seeds, bunged whatever was hanging about in,can't remember whether I put some oil in but it sounds good to me,didn't score it or anything, no oil on outside,replaced it's top as a lid, put on tray and baked it with the roast beef, so that would be about 180c I suppose. I think probably 1 hr should do it otherwise. I enjoyed it even if they didn't.

OOO-eck.....see Maggie's replied while I was typing....never mind...neighbour's got LOADS of squashes......so, gonna do Maggie's tonite, then River Cottage, then the Weight-Watcher's one (after the cream blow-out on Day 2)....

Ta everybody....(any more recipes before I hit 'post'.......?........no?....OK then, off I go...)

Thanks to this thread I now realise you can shove anything into a pumpkin or squash. We have just had slabs of tromboncino stuffed with a creamy mixture of chicken bits, onion, pepper, leek, bits of fetta and a grating of cheddar plus leftover rice and some hot cooked beetroots. Very nice mixture.
