no fuss chicken curry

GREENWIZARD

Ingredients
1 tbsp Oil
10g Butter
3 Cloves Garlic, crushed
1 Medium Onion, finely chopped
2 tbsp Garam Masala
1 tsp Ground Coriander
½ tsp dried mint
570g Boneless, Skinless Chicken Breast, diced
200 ml water

Method
Heat the oil and butter in a wok or large, heavy frying pan. Add the garlic and onion and stir fry for about 5 minutes until onion is golden.
Stir in the garam masala, coriander and mint. Add the chicken and cook over a moderate heat for 5 minutes, stirring occasionally.
Add the water, stir, and simmer without a lid for 10-15 minutes until the chicken is cooked and sauce has thickened.

If you like fresh coriander, stir in a tablespoon, chopped, prior to serving & enjoy ;D

For me, the best curry in a jar has to be one of the Lloyd Grossman

selection.

Have to say thanks to Tim, Matma's recipes are some of the easiest and tastiest curries going, made a whole meal tonight, and yes there were courgettes in it! ;D  But I agree with Debs in one respect, even though I find the man irritating, his korma sauce is great.

Haven't tried Grossman's - but, hate to say it, I do find Tesco's Finest ones very acceptable.

Northerner   I think he is an annoying git!  He came to our town's food fest and the invited guests had to pre-order their meal as it was to be very specially prepared to showcase all local fayre.  Anyroad he arrived and changed his food order from meat to veg so a veggie had to have his meat dish.  That went down right well  ;D


Tim   Don't usually bother with curry sauces but I will try the Tesco Finest.  Ta for the tip

Having lived in the middle and far east I love Nazir's curry paste, any recipe, but can no longer get it anywhere down south!  I keep searching for it everywhere I go.  They don't have a web site and I can't find it on any mail order sites either, but if you see it I can well recommend it.  Safeways in Wilmslow used to sell it and Macclesfield market used to have it too.
