Spiced Vinegar

There have been several posts about pickling.  Thought people might be interested in this:-

If clear vinegar is required use whole spices:-

To every 2 pts of cider/white wine vinegar add ...

2" piece cinnamon
1 tsp cloves
1 tsp mace
2 tsp allspice or Jamaican pepper
1 tsp black pepper corns
1 tsp mustard seed
2-3 bay leaves

1" root ginger - if a little heat desired!

Cold vinegar - steep in unheated vinegar 2-3 months"!  Then strain and pour over veggies etc.
Bottle in usual way.

Cold vinegar is best for veg that needs to be kept crisp - like onions!

If clear vinegar is not required use ground spices:-

1/4 oz cinnamon
1/4 oz cloves
1/4 oz mace
1/4 oz allspice or Jamaican pepper
1/2  doz black pepper corns
1 tsp mustard seed
2-3 bay leaves

1/4 oz ginger - if a little heat desired!

double up the quantities if stronger taste required.

sugar is added to taste just prior to bottling, bring vinegar up to the boil to dissolve sugar and take off heat straight away.
