Bolted Lettuce Soup.

I have the lettuce -but not the recipe, has anyone tried it?

Me too, I've got shedloads of lettuce and no idea of what to do with it.

Confuscious say - only plant as much as one can eat  ???

Although that lot of lettuce is now compost, but there'll be plenty more to come -I hope.

Excellent!  I have been chucking my bolted lettuce on the compost heap - tomorrow I will be cooking up some soup for sure.  If it is tasty, I wonder how if freezes.......

Lettuce know how it tastes E-J, although the slugs seem to be getting mine before it gets a chance to bolt  >:(

Made it today Jeremy.  It took 2 of my lettuces, a romano and a biondi, and you know, it is quite tasty.  Now I have the basis, I  could jazz it up to taste.  I was thinking, as my spinach has bolted, there is no reason why I couldn't use that!  I shall be trying it out on the old man tonite, see what he thinks, but I will definately be making it again as I have 8 more bolted lettuce on the plot, and I would much rather use them and freeze the soup than just pull them up and dump them!  ;D

Excellent, I'll give it a go when the lettuces take off. I think they look quite statuesque when they bolt.

I think spinach would work -and the recipe doesn't sound a million miles away from watercress soup either.

Yes it produces an very acceptable summer soup.!
By leaving the core of the bolted lettuce in, the soup acquires a crunchy texture when it goes into the blender. Gorgeous with some fresh bread straight from the bakery mmm.

Using db's recipe, will it freeze successfully - given the butter in it?

Did it last night, putting only the outside leaves of a Romaine in. Sudden thought this am - that was 1lb of lettuce!  Oh, well! = Tim

Tried the recipe, supprisingly nice and will make again. Anyone tried freezing it yet?

Bringing this one back to the fore again, cos (no pun intended) tis the season to have a glut of lettuce!
I can't seem to get into the link, but my sister gave me her recipe which she swears is delicious, and it won a friend of hers a dishwasher off her husband!
BTW did anyone try freezing it last year??   DP

Lettuce Soup

1 lettuce
1 onion
1lb potatoes
11/2 pints chicken stock or vegetable stock

Fry onion and potato until soft.
Add stock, lettuce and seasoning. Cook for about 20 mins.
Liquidise

I presume fry in butter or olive oil.

ooo ooo....me me!  I made gallons, due to a sudden glut of bolted lettuce, and froze lots.  I actually think it was better after it had been frozen.  Much less bitter, not that it was bitter in the first place...smoother I guess.  I have bolted lettuce, I am going to the plot tomoz, I have proper chicken stock in the freezer, I shall harvest and cook up tomorrow!  ;D

As another thought you can still strip and use the leaves from many bolted lettuce plants without any loss of flavour or texture.   This is especially true of the red specialities such as Lollo Rosso, Red Oak and Red Batavia - possibly as they are fairly tasteless and slightly bitter anyway in my opinion!   I have harvested and used them from plants more like small Xmas trees - literally 5 feet high!!
