My neighbour is lobbing(in the nicest possible way!) loads of superb parsnips at me - and still they come...

I've done the usual things - roasting, parsnip chips, parsnip soup, and have been experimenting with Parsnip Patties (and they freeze well, too):

Boil cut up parsnips in salted water till tender. Mash well. Saute finely chopped onion, bacon & chilli (optional for some, obligatory for me!) in butter. Add to parsnip mash. Add large handful of chopped parsley & grated cheese to mix. Put dollops in greased patty tins. add more cheese on top. Bake.  I'll be doing them with diff. additions, as scraps in the fridge need using up & certainly going to try a little curry powder...

Any more recipes or ideas, please?

You could throw a few westwards from you. We got 6 seeds to germinate and if they are anything like the turnips and carrots they will be full of worms. And I like creamed parsnips.

Well, I don't know! I'm being inundated with parsnips, but no exotic recipes?? Where's Suzie-O, the Runner Bean Queen, when you need her...

Sorry about your measley crops, Tim and Eric, but I'm back from a morning out - to find 6 more parsnips and some leeks on my doorstep..my neighbours and I have such a good arrangement with our veg...late summer they went off to a cottage in the Highlands laden with stuff from my garden which they don't grow, including Swiss Chard and Spinach that he isn't allowed to grow - cos she doesn't like it.. Huh

Anyway...got a crock-pot (remember those?) simmering away with a beef & red wine casserole & I'm gonna be creative with pureed parsnips mixed in with suet & stuff and invent

Oh yeah - yummy yum - let me know how they went, Lish. I love Parsnips and, even though I didn't do too well on the lottie front with them - they are cheap as chips in our local market, so I'll buy some!!

Hey Palustris.

Parsnup germination. Clear and rake the row/s where you are going to grwo the parsnups.

At home make strips of wet/damp kitchen towel, put a seed every 4-6" and in the warm they will germinate quickly. As soon as germinated (tiny shoot) take to lottie and lay on your row and gently and finely cover with used grow bag compost or similar.

Thanks Merv. We usually sow them in fungicide free wallpaper paste and pipe the germinated seeds into drills, but for the last couple of years the seeds have grown like mustard so we have not bothered. We had a very, very dry period just after sowing.
Strangely enough some peas which were sown at the same time and which failed to appear (mice we thought) have just started to grow now. Actually I did use a certain amount of hyperbole, 50% more parsnips grew than I said.

Well, parsnips back to the top, cos I've been making yet more parsnip patties tonight!! Lidl are selling huge bags of them for pennies...onion and rosemary this time..ahhhh! these parsnip patties are going to go on...and on...and on...they freeze well, too, I've found. And my friend's children like them! The boiling & mashing with this'n that takes away that strong...well...parsnip?...flavour. The parsnip dumplings were a success, btw. - Lishka

The parsnip balls were nice - well...they all got eaten, anyway...mashed them up with some butter, added finely chopped onion, no chilli Sad (cos some of the ladies were of a nervous disposition & I couldn't risk the sudden rush of blood to the brain they might cause) some grated cheese, some parsley & a bit of curry powder & used some egg to bind. Fashioned them into balls, firmed them up in the fridge & coated them with fine breadcrumbs & fried them..took along a couple of pots of home-made spicy dip-things. Cool

PS why can't we see you in your black leathers - have you seen EJ & Ava on their bike?  You, EJ, Ava, Jethro...there's gonna be a Biker Grove on Lotties soon - cheers, Lish

Hi Alishka,
First I would like to say "Hello" to everyone & congratulate you on a brilliant site.  I have learnt so much from all the tips & general chit-chat.  I have only had my Lottie since August, so I am very new to this game. I was particularly interested in your 'Parsnip Predicament' I thought I would have a look for some recipes just incase some of my crops should grow, when I came across a recipe for 'Parsnip wine' it is very basic, without the need for demi-jons & tubes & things.

5 1b peeled, parsnips,
3 1b sugar to every gallon after straining
1 gallon water
1 tablespoonful yeast

Peel & cut up the parsnips, & boil in the water until tender.  Mash very well. Strain through a scalded jelly bag without pressing.  Add the sugar, bring to the boil, cool, & add the yeast. Ferment in a stone jar, fill up with surplus liquid, & cork securely when fermentation ceases. Leave 6 months before bottling.

I have heard that jars & bottles are OK to sterilise in the dishwasher, would be interested to know if anybody else uses this method.
