Storing Beetroot

Has anyone ever stored beetroot in crates/boxes of compost or sand?  Does it work ok?

Yes, just make sure the compost is barely damp and omit all light otherwise they start growing again.

Kind of OT this but I stored some, unwashed in plastic bags, in the fridge last year. They were finally all eaten in March. What amazed me was that even in the fridge those last beets were regrowing little leaves. It was one of those moments where I was overbowled by the tenacity of life even when presented with the worst of conditions.

We do and we get early spring re-growth to use as salad leaves, too  ;D
