the nicest shop bought marmalade (on a bit of a side note) I have found is the Defour fruit spread Orange and ginger.  It is yummy!  All the Defour spreads are made with fruit. No sugar at all.  Grape juice to sweeten it.

emma, the dalfour jams used to be made with apple juice as sweetener (about 5 years ago?). this was suitable for people with type II diabetes (who control it through diet, like my dad).
i thought grape juice does not offer this - i am under the impression that grape contains sugars which are too quickly absorbed (dextrose?) and hence are not suitable for a diet controlled diabetes.

i am happy to learn otherwise though :)

They are not much better then white or brown sugar !!!

Though that was just two websites - so you should look a lot more before trusting it!

Well - the waiting's over - the job's done!!

Because the Sevilles were frozen, I added a fresh lemon & an ordinary orange. Forgot to add more sugar. Pressure cooked 15 min from thawed - not frozen as the book says - pre-heated the dissolved sugar, added the fruit  & cooked on to exactly 220F.
Couldn't find the jam funnel, so had real fun trying to fill the hot pots!! Glad I had bought one of those fireproof gloves.
Result? An acceptable set. Don't like it stiff. Cloudier than my ideal because, when cutting up the fruit I found that, unusually, the membranes had entirely dissolved, so all I put into 'the pip bag' were the pips

Of course, 'the family' were here yesterday & we're left with only 10 jars. But I suppose that's what we're here for??

Oh Tim, looks devine!  Adore chunkiest marmalade on freshly made, warm, proper bread with plenty of butter!

I shall be around for afternoon tea, get the kettle on.  ;D
