TINNED CHESTNUTS ~~ ANY IDEAS!!???

I have been clearing out and cleaning my kitchen cupboards and found right at the back two tins of chestnuts. I obviously meant to do something wonderful with them last christmas but didn't get around to it  ::)
So do you have any good recipes that would make good use of them?

I've only ever done the fresh ones at Christmas I'm afraid - thy usually explode all over the oven then when you have visitors the next day everyone keeps telling you they are sure the roast is burning ! ::)

Have you concidered a pate - i cant find my recipe but you can add chestnuts either chopped or pureed into any chicken or duck liver pate.
Moved to Portugal - ain't going back!

I tend to use fresh as well but have used tinned ones in a pie. Its a recipie that I've done so many times over the years and each time it comes out slightly differently but always delicious. I also tend to cook using my eyes and not measuring / weighing so sorry for the inexact science about to follow -

You can do either veggie or non veggie. I'll do a version of it for 2/3 people but have cooked it for 12+ before!

I put some olive oil in a frying pan / wok and then add some chopped garlic, then about 6 shallots (peeled but left whole) and lots of mushrooms (get a mixture like button and chestnut cut in half), basically you are trying to start them off, and get some colour into them. Then I add mixed herbs (thyme, bay etc) then a few chopped toms, cook a bit more, I then add a good sploosh of red wine and a drop or 2 of soy sauce and Worcestershire sauce (for added flavour) and then a small amount of veggie stock. Cook the sauce in, if you want to thicken it you could add flour / cornflour but I don't tend to bother as it cooks down in the oven. I would then add maybe 6 new potatoes, cooked and halved (but you can leave these out and have them on the side). Now put the chestnuts in. Then put the mixture into an oven proof dish and then cover with a sheet of puff pastry, make a few slits in the pastry and seal it round the edges. Then pop in the oven on about 180 or 200 (I always have to check the flaky pastry packet for the timings and temperatures!), for about 40 mins

You could do it with cubed beef, but I prefer the veggie version

Puree it and add it to a chocolate mousse made with 70% chocolate and cream! mmmmmmmmm

You could have them with sprouts. They go very well together. It would have to be frozen or you would have to leave them in the cupboard for a few more months Duke

They would have gone well with your wonderful sprouts - I still have "sprout envy"! :P

You could substitute one of your tins perhaps.

Chestnuts go well with beef in a casserole.  I have a recipe which uses chestnut puree but if you have a good beef casserole recipe you could add the chestnuts to it.  Looks just the sort of day for comfort food today.

While cleaning I also found two tins of goose fat  :-\ seems like me being a domestic goddess at Christmas passed me by somehow !!

Chestnuts soaked in alcohol served with vanilla ice cream.   Yummy!!
