sage, sage everywhere

I need ideas for what to do with my enormous sage bush.

The normal sage bush has grown huge this year. And I have four other sage plants (purple, pineapple, tricoloured and green/yellow).

I'm a veggie, so the usual meat and sage things are out (unless it's adaptable with a meat substitute), although I love a good sage and onion stuffing, but that's all that I ever use it for. (I just love herbs in the garden!)

what else can I do?

I think I've a recipe for sage soup somewhere and can't you make pillows or something?

I just typed sage soup into google -you'll be able to make gallons of the stuff  ;D

You'll obviously never need to freeze the stuff - so, to get rid of a few leaves:

Grill rounds of goat's cheese & set them on thick, oiled rounds of bread, baked till crisp. Serve with mixed salad leaves - I like a bit of rocket - dressed with 4oz Walnut Oil+2tbs Cider Vinegar+1tsp soft Brown Sugar+1tsp Dijon Mustard+ 1/4tsp Salt+1/2tsp Black Pepper.  Sprinkle over 2tbs each of chopped Walnuts & Sage. (Masterchef 1992).

I like them deep fried in oil until they go crispy, which is a matter of seconds, and then eating them like crisps, or using sprinkled over soups or salads.  

I do love the 'medicinal' scent and flavour of fresh sage, but I am alone in that love in this house.  Just dumped one woody old sage bush  :'(, but it does grow so easily from seed, I plan to grow it almost like an annual, or biennial, giving it just a couple of years before binning.

Derbex - gallons indeed with the amount I have. I'll give it a go when it gets a bit cooler.

Tim - you're right - I don't like goats cheese! But I can work round these things!

Emma - sounds yummy, I'll definitely have to try that.

I wonder if sage and onion pesto will work...
