I add chopped Pepper for colour, And leave 4 or 5 hours dehydrating under a 10lb weight.

Just wish to add, these are delicious and I always make a couple of jars from the big or slightly bitter cukes that I often am left with.

Just been to the allotment tonight and two cucumbers that I picked are bitter so they should ok in the recipe then?

Tim I did this recipe today but the liquid didn't thicken is that correct?

Also wished I hadn't of done slices as I found them hard to get into the jars and so not really alot in them.

Rosy -

1. 15 min boiling should reduce the liquid to a treacly goo.

2. Slices? No - I always do small dice. But either way, pack them down tight into the jars before adding the juice.

opps mine was still thin shall I reduce it some more by pouring off the liquid from the jars? I put the remainder in a jar just in case.

I only have 250g of soft brown sugar - would it matter if I made up the difference with caster sugar ???  ???

Rosy - so sorry that I missed that. Don't understand why no thickening. Done 100s of jars. Measurements?? But yes - it might have helped, but not really necessary. Use the left-over for some Beetroot?

I'll give that a go today, I only have two cucumbers left, so I'll add some sweetcorn (maybe chopped up in the blender first).
And some chillies.  :D

I ate a chopped whole small cucumber last night with some squeezy mint sauce and soy sauce.

What I don't understand is why recipes specify caster sugar when it's going to be dissolved anyway.
It's probably a conspiracy by the supermarkets to make us buy more expensive sugar.  >:(
