Cream of chive soup

Well, in the interests of research I gave soup with chives a go. Did a v. basic soup, using no seasonings apart from s & white pepper, to then see what another try would take...

Sauteed some chopped shallots and cubed potato in chicken stock ( Oxo cube - next will be the proper stuff). Brought to the boil then simmered. When the cubed potatoes were al dente, added loads of chopped chives (as they're coming into bud and I did use loads, didn't bother to snip the buds off - I'd still be doing it now!). Topped up with milk and simmered for half-an-hour (while the meal-for-our-queen was on). Left to rest for 15 mns (TA)..then blitzed in the moulinex.

Blind taste wouldn't have identified chives, but it was an edible green soup. Nothing special at all. But, with masses of free chives in the garden, shall be making it again. Proper home-made chicken stock, for starters, and I'm thinking that some chopped shrimp added at the last min. might be nice. Get the impression that it will make a good cold soup - perhaps with a dollop of soured cream?

End of the day, tho, a disappointment as the taste of chives just ain't there.And I've now got the kitchen walls to clean, as the first blitz blew the lid off.

had the rest of the soup this evening. Taste much improved by eating 2nd day......can actually taste the chives! Will deffo be doing it again.

I don't know how Supermarkets and Garden centres sell chives, once you've got some they take over.... I'm still trying to dig them out from between the slabs on that path to the poly!

Just to say that it was great chilled.

With a pea-shoot & rocket salad.

Shame that the original photos got binned.

Oh, & some folk use the flowers as edible garnish.
