I have just come across (well not just given the time but you know what I mean!) my spring cauliflowers that I'd forgotten all about until I found them still in their little pots in the garden.  They only have about three to four leaves and are looking like they are long overdue planting in.

Have I missed the boat or if I plant them now will they still mature enough to survive winter?

Well I think they should be fine as I've only just ordered my brassicas collection from Dobies (as others have on here) and they've not been delivered yet so I assume there's still time.  Although I suppose it depends on what variety they are whether they come  through the winter.  But hey nothing ventured etc  :)  You've nothing to lose as you've already grown them  :)
I came, I saw, I composted

Just about everything in trays got to that stage before I put it in - pretty much restricted to the summer holidays.  I found that once they got in and settled, they were so grateful they rampaged away.
