Courgette cake

This freezes brilliantly, and even my kids eat it!


8oz caster sugar
8 oz plain flour
1/4 tsp bicarbonate of soda
2 tsp baking powder
3 teaspoons ground cinnamon
1/2 tsp salt
8 floz vegetable oil
2 tspn vanilla essence
3 eggs
8oz cougettes grated
5 oz raisins
4 oz walnuts (optional)


Sieve all dry ingredients into a bowl, add oil, vanilla and eggs, beat well. Add remaining ingredients and pour into 2 loaf pans. Bake 40-50 mins, gas 4.

Sounds yummy - I shall have to give it a go. (If my courgettes ever grow - otherwise farm shop produce, I guess!)

After all - courgettes are technically fruits. I like carrot cake, but carrots are definitely vegetables!

Good stuff DP.  Was planning to make this tomoz afternoon and you have saved me a search.  I don't have any raisins or walnuts...wonder if I will remember when I pop into the coop tomorrow morning.....so will have to do it without.  Sure it will be just fine!  ;D  Ooooo, mind you, I have a bowl of fresh blackcurrants in the fridge, I wonder................

Sounds lke the perfect recipe for all those courgettes which are nearly ready.

But........ I can't find caster sugar or bicarbonate of soda here in Sweden - is it ok to use normal granulated sugar? Is there anything i can use instead of bicarbonate?
Did you try it with blackcurrants EJ? Was it good?

Caster suger is just a finer texture than granulated.. Stick granulated sugar in a plastic bag and give it a bash with a rolling pin.
Bicarboante of soda, not sure about an alternative for that, though something that makes gas when mixed with moisture and heated might do?

Thanks Greenfingers - I am going home (to England) for a few days next week so I can always pick up some bicarbonate of soda.

Bicarbonate of soda in the States is called  Baking Soda if thats any help!
Granulated sugar works just as well as caster in this recipe, another way to create caster, or fine sugar is to wizz it in a liquidiser or  food processor.

I made this (not your recipe but another I found online) in a effort to use up the glut of courgettes we're currently enjoying.
I was 'okay' a bit heavy really. My husband enjoyed it but then he will eat anything with sugar in it.
But anyway I'm sure your efforts will be better than mine!
