Generous portions? Ah well! Having catered for a family of 5-7 for the last 30odd years (now reduced to two) I find that I still tend to cook massively more than is required. Thank goodness for freezers!

4 thighs serves 2 in our household with this recipe Tim, you just can't find large chicken thighs anymore it seems

Doris - my ma in law taught me to cook and always said always add an extra portion for the unexpected guest - if he/she doesn't turn up save it for tomorrow's lunch  ;)

I liked the look of the rhubarb with puff pastry and cream cheese but I don't think my gut would agree. :(
