Most of my Pak choy seems to be going to seed rather that hearting up.  Will it still be edible or should I pull it up and give it to the chickens?

They don't and once they have flowered they do go bitter so at the time of year treat them as cut and come again. If you want full hearted once grow them when it's cool.

I agree, I don't even think about sowing mine until late july along with the chicories and chinese cabbages - if you have plenty of seed it can be worth trying for earlier crops as you never know how the summer will turn out and if cool they'll be ok but overall, best to sow later (and fleece or cover from beetle)
