Any body any ideas what to do with the last of last years' leeks? Some small, some smaller.

Braise the slim ones....

Dip them in batter and deep fry sort of like onion rings but not...

Leek quiche? Or small tartlets. Or creamy leeks on a home-made pizza base. (All of these freeze.)

The thin ones can be braised and served cool as a starter (deglaze with something like balsamic or sherry vinegar & a little sugar). Slice the bigger ones into rings, braise (covered) with butter & a little water; add cheese to finish or not, as the fancy takes you.

I bet there's a leek chutney recipe out there somewhere, but I've never come across one! (But what about leek marmalade, made the same way as onion marmalade?)
