- to freeze Soups with Butter in them?

tim

MrsKP

not a clue.  you can freeze butter (can't you ?)   8)
There's something happening every day  @ http://kaypeesplot.blogspot.com/ & http://kaypeeslottie.blogspot.com/

think butter is ok but i have had problems freezing soup with milk or cream in (like leek and potaoto). that might just be me though.

tim

I had it in mind that one had to substitute oil in some cases.

I think it might (marginally) affect the length of time you can store them for, but otherwise see no particular problem with freezing soups containing butter. Cream is more of a problem since it tends to separate and I would add after defrosting.

Yes, i've had problems re-heating soup containing milk from frozen.  Will remember to add when we're going to eat it next time...
Don't cry because it's over, smile because it happened

We've never had a problem freezing soups in which butter was used to colour the vegetables, for example.  No separation or curdling.

In passing, I note that the way to prevent milk separating after freezing is to thaw in COLD water.

sarah

top tip.  i will remember that.

my darling hubby is a chef and he says you should have no problem freezing soup with butter in it
