sweetcorn glut

I counted 32 sweetcorn silks yesterday and thats just the beginning!

What do i do with the sweetcorn that im not going to eat immediately??? Do i blanche it and freeze it? How do it do that?

is there anything else i can do with it?

I thought you only got one sweetcorn to a plant, how many do you get?

Usually two, maybe one, sometimes more.

I blanch, plunge them in to boiling water for about 30 or so seconds.

Then into cold/iced water to cool rapidy.

Drain and wrap in clingfilm and into the freezer. They will last 12 months.

You can also miss out the blancging and freeze direct but they wont keep as long.

Finally you can strip the corn from the cobs and freeze in bags, saves a lot of space. Not tried that myself.

I have 21 plants with an average of 2-3 on each plant! and thats only what i could see as i was in a hurry.

i have 70-odd plants with a couple of cobs on each. If we can't eat it all the people at church undoubtedly will. We don't have that sort of freezer space unfortunately.

I was just thinking we need a bigger freezer - actually teh fridge and freezer are ready for the tip... so will make sure we get one with loads of space - I think my utility will be filled with an american style FF but as long as i can squeeze out of the back door it should be ok LOL

I am buying a new bigger fridge/freezer for the kitchen then I am going to do up the shed to but a medium sized freezer in there. And we don't eat meat so we don't need to keep that stuff.  Still need loads of freezer space though :)

Stripping the corn does mean that a lot less freezer space is needed ... having stored 50 corn last year, it is surprising just how much space is required.
The impossible is just a journey away ...

thought as we are discussing sweetcorn, I would share this with you.... My first 6 cobs this year... Very proud of me and my mum....had the lottie since Oct 05 and have produced lots of nice home grown produce... Bit of a learning curve this year with regards to crop rotation and amount planted....have more runner beans and broad beans than I know what to do with....oh well, friends receive greatfully....

Here's my picture album of our marrows, spring onions, carrot (ate the others), new potatoes and sweet corn....followed by my little princess eating the first one all up....

i dont have to worry about a sweetcorn glut, as our resident squirrell will eat them all quitew happily for me.

i am not amused

I leave ther leaves and everything on and cook them in the oven. They come out beautifully steamed, and extremely hot so you have to be careful!
