Celery question

I have about 8 celery plants still left on the plot.  They were knocked back by the cold, but not killed and now have lovely new fresh green leaves sprouting.  My question is, will they go straight to flower, so I may as well oik them out and stick them on the compost bin, or will they produce a flush of leaves and stems that can be used before giving up the ghost later in the year?  Thanks celery growers!  ;D

If you can spare the room, the leaves are great?

EJ why don't you leave them to go to seed, you can use the seeds for making celery salt. :)
