One of my favourites is the AGA one.

Draw out fat from 1lb Beef Mince on gentle heat - add chopped Onion & fry quickly - add 1/4pt Beef Stock, cover & simmer 20min - remove from heat & add 2tbs Fresh Breadcrumbs, s&p.

Make 3/4pt White Sauce. Add 1tsp Dijon Mustard & pinch Nutmeg.

Peel Marrow, cut into 1" rings, deseed & blanch 4-5min till still just crisp - drain & arrange in pan - pile in Mince/Onion mix -  spoon over sauce - scatter over 4oz grated Cheddar.

Cook 30min till golden.

try Delia's Baked Marrow with Toms & Coriander

1 1/2 lb marrow cut into 1" chunks
8 oz peeled & chopped tomatoes
small onion chopped
1-2 cloves garlic
1 tsp crushed coriander seeds
1 dsp fresh chopped basil (stirred in before serving)
salt & pepper

if the marrow is young peeling is not necessary, I compromise and make it stripy!!

soften onion in a little oil, add the rest of ingredients,
bake till tender (approx 45-60 mins)
325 deg F.

eat with brown rice or crusty french bread to sop us the juices!  delicious
