Green Tomato Chutney

A wonderful Landlady gave me this recipe.  Felt very honoured, it was a closely guarded secret!!

Green Tomato Chutney

4 lbs green tomatoes
1 lb   cooking apples
1 1/2 lbs shallots
8 oz  raisins
1 pt  vinegar
1 lb  soft brown sugar
2 tsp salt (optional - to taste)

1 oz root ginger ( I grate or chop this as I like to leave it in)
10-12 chillies ( in a muslin bag )

Chop up the toms, peel and chop apples and shallots.

Here you could mince all the fruit, depends on the finish required.  I like lumps!

Bruise ginger and chillies place in bag.

Place all ingredients into pan, bring to boil and simmer until chutney has achieved the desired consistency.

Remove the spices, and bottle.

I usually make at least twice this quantity, in different batches.  Some times I add a tablespoon of mustard seeds.

Leave to 'mature and mellow' for at least three months if you can!!

i can put this in jars and give some away at christmas time for that lovely 'i grew/cooked this' feeling.
i might even go over the top with gingham jar covers and pretty labels!

Delia Smith's Green Tomato chutney recipe is good too.  I used to always make it but haven't grown tomotoes for a while as I haven't had someone to water them when I am away.  Perhaps next year...

Some people complain about green tom chutters, but I made some last autumn, and we are on the last of the jars, and it is delish!  Wouldn't add the raisins as my darling doesn't really like them in things, but do add a few finely chopped chillis, just for a little heat.

How many jars does this make, ( sorry for stupid question). The reason I ask is I picked 300g of green toms, but I don't think I have enough. Can I just half the recipe.

This quantity usually gives me 7-8 jars of chutney.

It really depends on how long you cook it for, how much fluid you get to evaporate, and how solid or juicy you like chutney !!

Ironically I have had a rubbish year growing Toms, so I don't think I will be able to make any this year.  And I have run out - it's my favorite too  :'( :'( :'(
