Pickled Garlic

I seem to remember EJ talking about Gavin's recipie. Does anyone know how he does it? I have 4 or 5 heads of garlic that are not going to store so well so I thought I would give it a go.

any pointers on braiding then? mine were lifted about 10 days ago and dried indoors (in our absence). the shafts are not too brittle yet.

also, how do you know which heads are going to store and which aren't? ???

I was just about to go dwnstairs and start to braid mine Svea! I was just going to plait them like hair, adding another one in as you go up, if you see what I mean! If thats a complete disaster, I might be back on here in 30 mins looking for the same answer! ;D

Round and round with hessian. Left a loop in the back so it can be hung.

A really superb variation is to preserve the garlic together with finely chopped fresh root ginger and replace the vinegar with Soy Sauce and sugar. brilliant in Stir Fries with fresh spring onions and Chinese Cabbage. BTW, the Iranian pickled Garlic is kept in some Iranian homes for up to 5 years!!!  I worked in the Middle East for 11 years and the really well aged stuff is a special delicacy. It's sooo good I can't imagine keeping it for so long. Mine only lasts a couple of months ;D

A form of Plaiting. Been shown many times. Much easier. And adequate. DP - I freeze them whole.

Yup, that's how I do mine Tim, and I have got it down to quite an art now.  ;D  I have onions, garlic and shallots all hanging in my shed, phewweee the smell when you open the door!

i did an old fashoined braid and my allotment buddy/friend said 'pah it looks like one of those you buy in the market'. couldnt quite make out if he approved or not   ???

was fun to make, mind. looking forward to next year :D

This thread reminded me I had a jar of Garlic and Lemon pickle left from last year, took it to my sisters barbeque last night and it was delish! 
Can I remember where I got the recipe from to make more? Can I 'eck! >:(

Thanks all, some frozen and some pickled.

Not braided the other 46 heads as yet as I only lifted them at the weekend. Drying on a chicken wire frame at home.

Ahhh Tim, of course it would have been Gavin!
Will have a trawl and see if I can find the recipe because it was so delicious with cheddar and homemade bread!
