Just got back from hols to find two of my aubergines have lost their sheen. Am I right in thinking they will be bitter, or is there anything I can do with them?

Actually I have never found aubergines to be bitter whether I grow them myself or buy them in shops or markets. All the cook books talk about salting them to "draw out the bitterness".
I used to do this at the start but now never bother and haven't done for several years! I wonder if the varieties we grow have had their bitterness bred out of them and the cookbooks haven't caught up yet. What's everyone elses experience?

Just bumping this up- sorry to be impatient but if I can avoid throwing them away, I'd like to! All my googling says dull skinned fruit is over-mature but doesn't say whether it's still edible!

As long as they are not rotting I'd eat them!

We use ours in that state too... in Thai aubergine curry it really doesn't matter!

Sounds good, David- have you got a recipe?

saddad

OH does I'll nag her for it...

Yes that would be useful! I harvested a couple of Early Long Purple aubergines this morning (one dull one a lot brighter!). A Thai aubergine curry would be a great idea for tonight. Perhaps with some prawns?

I haven't forgotten, so I harvested 10lbs of Aubergines to get her going...
