Which way is up?

Had some wonderful horseradish roots sent to me by djbreton from this site, thanks mate  ;), and was just wondering which way up to plant them, they are showing signs of sprouting new growth but dont know wether to plant them with the new growth growing up or down.

They sprouted whilst horizontal in a box of sand. You are apparently supposed to plant them at a 45 degree angle which should get the sprouts growing upwards then. If I sent any that hadn't sprouted I'd pop them horizontally into a couple of inches of compost till you can tell which end is the top.

How should you dry and store horsradish and should you peel them or just grate them

I grate it on a microplane grater - in front of a powerful extractor fan - & freeze it.

For sauce, use mayo rather than cream - then it keeps in the fridge.
