I have just made blackcurrant cordial - recepie from River cottage. I have added some brandy as suggested and now I realise I dont know how to use it, can i dilute with water as you would without the brandy or should I use in fizzy wine?? Has anyone made this?

For every 1kg of blackcurrants. no need to pick over too much as they are strained
600ml water.
Bring to boil and simmer for about 45mins. Strain into a bowl over night using scalded teatowel or appropriate method.

Put strained juice into pan,For every litre of juice use 700ml of sugar .heat gently to dissolve sugar. Remove from heat and pour into sterilised bottles leaving a 1cm gap at top. At this point you can add a couple of teaspoons of brandy. Seal. Hope this is what you wanted.

artichoke

I have just made some blackcurrant cordial and found it a bit bland and sweet until I added citric acid, which gave it a lovely sharpness:

I have made raspberry cordial, follow the blackberry recipe but add one lemon and one orange cut up with skin on , this takes some of the sweetness away and it really gives it a tang.
Hi I'm from Heywood, Lancashire

calendula

Made this the other day and everything was fine until I answered the phone and forgot to watch the juice when the sugar was dissolving.  Spent an hour yesterday trying to get blackcurrant jelly out of a bottle  ::)

Queen bee - just want to check - do you use the same blackcurrant recipe as lalilalla and boil up the lemon and orange with the blackcurrants please? I still have raspberries in the freezer since last year and the new ones will be here any day now!
