What is the best way to ensure you have "A set"? Cheers, Tony.

I thought brambles were loaded with pectin.  However, ensure you have the correct ratio of sugar to liquid - I always do a pint to a pound.  Make sure you bring it up to a vigourous boil, and boil rapidly until setting point is reached - if you don't have a sugar thermometer then put a couple of saucers in the freezer to get real cold, then boil the jelly for 15 or so minutes, take of the heat and put a teaspoon full onto a cold saucer.  If it produces a skin and wrinkles when pushed, you have a set, if it is still runny, boil again and repeat every 5 or so minutes.
The other thing you could do is buy preserving sugar, which is a little bit more expensive than normal sugar as it has pectin added to ensure a set.  Or....cor, I do go on don't I!  You could put in some chopped apple as they are high in pectin, or the juice of a couple of lemons.
