I have to make something to take to the lotties barbie.

You have to have grown the ingredients on the plot and it would have to be okay to stay covered for a couple of hours after making it.

I have lettuce, beets, toms, peas, onions and potatoes oh and courgettes ::) Any ideas would be more than appreciated, to turn those ingredients into something really tasty.

Sinbad, you dont want much, do you!!

With the ingredients you mention I would go for a Salad Nicoise, with a tin of tuna.

The only problem is that it should be served as soon after preparation as possible, so would not really keep for a couple of hours.

Salads do not 'keep'.  Once you've put the dressing on, everything wilts.

what about a nice frittata then serve it with a salad, its basically a quiche with no pastry put in the veg all except the beets and lettuce and cook in the oven yum delicious hot or cold then serve with a lettuce and beetroot salad

With the courgettes I would make a courgette carpaccio.....can be easily done ahead As the courgette needs to marinade in the dressing, and is very tasty! ;D

Slice courgettes as thinly as possible, (mandoline would be good for this if you have one, not he musical instrument tho!)  lay out in a shallow dish, like scales on a fish!  Drizzle with lemon juice, and olive oil, grate with black pepper and sprinkle on parmesan shavings. Cover and leave to marinade. Serve!!

Potatoes and onions would make a potato salad, you could chuck the peas in too!

Beets I would cook and then toss in balsamic dressing and fresh basil, then bung them in the middle of a mixed salad, can be tossed when ready to serve! (Courgettes and fresh peas could go into salad too)

OR......got me thinking now!!  Cook pots and beets, leave to cool. Make a mixed salad with the remaining ingredients, add cold pots and beets, cover and chill.
Make up a dressing in a jam jar, and take it with you to "dress" last minute at your do!

Whatever you do....and there are SO many things to do. the key, as DottieP has written, is to dress at the last moment.....the salad,  I mean ::)....there again, a reverse strip by you and who'd notice a bit of wilting lettuce ;D

btw....if you're using pots.......dress them  while they're hot.....they'll absorb loads of garlicky juicy goodness.....add the rest cold (room temp) when about to serve & re-dress...

An I forgot....lettuce and onion frittata is SOOOO tasty, can be made well in advance too........saute onions til transluscent, add shredded lettuce, cover with beaten eggs.....carrying on from there..cook underside, flip..add handful of peas, cover with grated cheese before grilling the top layer....cool, cut in wedges...

And it goes nicely with lettuce and onion salad LOL

Grate the onions and the potatoes together, allow to drain or press them, add an egg and plenty of black pepper and salt.   shape into flat patties and fry in oil.  I only know the Polish word for them.

Thank you, thank you, thank you for your great ideas, I feel spoilt for choice now.

I like the sound of the courgettes, Doris Pinks, nice and easy.  Think I will have a practise this weekend of some of the recipes.  I usually cheat so hope they will be impressed with my efforts this year ;D

You did make me laugh Alishka_Maxwell.  It brought to mind an embarrassing moment when I was showing the chairman of our society some photo's I had taken with my digital camera, well I thought they were photo's of the site but the first one I clicked on was me taking a shower.  I am blushing at the memory of it.  So think the wilting lettuce would be fine, I'll dress me and it before I go ;)
