For some time I played around with stuffing recipes for turkey as I wanted to find one that is just right for my tastes. I did, and have  often shared it with good feedback. If anyone is cooking turkey and wants a change I can post it. XX Jeannine

              SUPER DUPER TURKEY STUFFING

I use a US measuring cup that holds 8 fluid ounces of liquid or 250 mls. a 5 ml teaspoon and a 15 ml tablespoon.

4 minced garlic cubes
1/4 cup butter
1 cup  fine chopped mushrooms
1 cup fine chopped celery
1/2 cup fine chopped onion
4 rashers of smoked bacon,precooked to crisp and crumbled
4 cups of gently packed bread cubes, please use granary or at least brown
You will need 6-8 slices depending on the thickness of the bread
1 tsp salt
1/2 tsp pepper
1/2 tsp dried thyme flakes
1/2 tsp dried oregano flakes
2 tsp dried parsley flakes
1/4 tsp ground sage
1 1/4 cups chicken stock, fresh,tinned or cubes
2 tbsp. goose fat (optional)

Saute the onion, celery ane garlic till just soft
Add the mushrooms and seasonings and bacon, saute a minute
Add the bread cubes,fold them in quickly so they all get a bit of butter
Stir fry for a moment
Add the stock,cover and cook on slow for about 5 minutes
Please don't overmix it, you want to see the cubes

Use as you would any stuffing

I like to turn into a goose fat greased dish and cook alongside the turkey for about 30 minutes. 325 F

I brush the top with the goose fat about halfway too.

You may swap the bacon for pretend bacon bits for a veggie option and swap goose fat for butter, or butter for oil.

Will also swap the 'dried flakes' for fresh....otherwise a cracker of a recipe & I'll use it. Thanks J 8)
