Seed potatoes query

Hi everyone,

Am a novice just starting out, but silly question of which I am curious:

When seed potatoes are planted, what happens to the actually seed itself when the plant grows? Does it become one of the pots you dig up and eat or does it miraculously disappear as the plant grows?
To plant today is to not plant tomorrow!

They rot away. Mostly if I look, I find the skin and very little else when I dig the crop.
