I know it is a bit on the early side .... but I am after the perfect fudge recipe for Christmas. I plan to make my own to give to some friends, obviously a lot of research and testing needs to be done to find the most yummy, melt in the mouth recipe  ;D

Anyone got a favourite recipe they don't mind sharing?

OH makes the most divine stuff with brown sugar - will have a look for recipe and post it for you.

Gosh, thanks Tim :o I am just about to hand in a Human Nutrition assignment and I need an antidote to all the science and healthy eating I've been studying.

Incidentally, we had to describe our diet for a typical day, calculate the amount of each type of food eaten and suggest ways of altering the diet to make it comply with the 'Balance of Good Health.' I managed to eat almost twice the daily recommended amount of fruit and veg due to the glut we were having at the lottie  ;D

Bring on the sugar!! (Assignment due in this week, I'm sure it'll pass)/

Thanks very much Tim, the recipe looks spot on! Gives me an excuse to buy some rum as well...

I'll let you know how the testing goes - I imagine it will take a few batches to perfect it  ;D

Any views on a good one? I've tried a few, but not expensive ones and haven't been happy with what I've had and have managed to break/ruin them.
If you, Tim, or anyone has any info on reliable good quality digital thermometers that will withstand a lot of hard use, steam etc, I would be very grateful to hear it.

I can only speak for mine, Jenny - Mastrad. Does everything - including Alarm. I never cook or defrost a joint without it. And great for defrosting through to cooking in the bottom oven. Had it for years - No2 Daughter has one too.
Otherwise, Nisbets have a good range, & their 'techies' will advise.

Make sure it'll do solids & liquids?

The one thing with their thermo is that it auto sets the correct temp for the thing you're cooking & what degree of cookedness. Saves you having to look it up each time.

I'll check their tel anyway.
