summer pudding

As you can see, I have an abundance of berries at the moment so would like to make a summer pudding to take with us when we go a-visiting for Sunday lunch this weekend.  Does anyone have a tried and tested and amazing recipe?????  I have never made it before so would welcome all advice.  :)

Havn't any advice re the summer pudding Emma but what a lovely idea to take one with you on your visit - your hosts will be delighted  :)

Can remember making one or two some years ago and enjoying them but just followed some recipe I had at the time. Sure I've got a Waitrose recipe around somewhere - will look but I've not made it so can't speak from my own 'tasting' experience.

Just want to say the basket of fruit looks soooo lip smacking good :P.....how lucky you are having them growing on your allotment....good luck with your pud!

I always made Delia Smith's, but with any combination of fruit, used to freeze a few too for Christmas time which was always lovely.  I must have another go - thanks for reminding me...

Okay, have made the delia one.  Smells fab!  I will be making a redcurrant sauce to drizzle over it when I turn it out.  Just have to ask them to get the cream!  I will try to remember to take a photo, if it turns out, and if I can stop the b*ggers scoffing it before I am ready!  ;D

OH does them really well - basically the same as Delia but with whatever friuit I present.  I do hope that you and you family enjoy yours.  Please post us a picture if you getaround to making one.

Try replacing bread with slices of brioche......wonderful!

butter the dish first...makes all the difference! Enjoy

I did, but still it stuck like wotsit to a doodah!  I figured I should have lined the dish with cling film to help ease it out.  However, the contents were delicious!

Yes, I forgot about the clingfilm, it does help, sorry.  Glad you enjoyed it though.

I think maybe you could dunk it into a bowl of hot water to melt the butter so it becomes liquid??? The butter makes it much more mellow! :P

My Delia one worked a treat. I greased the dish (a good old Mason Cash pudding bowl) and lined with fresh home-made bread, and suspect I cooked the berries a bit much but it didn't hurt! The quantities filled up the bowl perfectly, I rescued some of the juice as instructed and then stuck a circle of stiff plastic over the top (it was cut to fit) followed by a saucer, cling film and a bag of flour! (only 3lb weight I could find) Whole lot in fridge, on another saucer (good job, given how much juice escaped!).

Didn't need the extra juice - it was perfectly soaked, and popped straight out after I stuck a flat knife down the side to let in air. Have eaten half (and even got Sir to eat some, he of the 'ugh, fruit and veg!' persuasion!). Wonderful with vanilla ice cream. 

And the spare juice is wonderful for putting separately over ice cream!

Oh well, looks like I will just have to try again!  Can you hear me complaining? 

"Oh no, please don't force me to eat any more of my delicious sweet fruits, oh stop with the cream, no, no, I really shouldn't...."
