Allotments 4 All

 We are growing melons for the first time , and are not sure about pinching out growing points,or taking of some of the flowers.They are growing like crazy in a hot and  steamy greenhouse, and are producing lots of flowers, what do next? Can we just leave them to it? Advice please.
