Courgettes!

Don't know about you, but last year my courgettes looked like they were genetically modified. I swear that I could see them growing whilst I sat there  :o

As usual, I tried to give them away, with no luck. Ahmed, my neighbour got wise to me! I hung carrier bags of the damned things on his gate in the evening and ran away  ;D

Found the carrier bags hanging on my gate the next morning! Courgette Ping Pong  ;D

So. Apart from the usual courgette and stilton soup, courgette chutney, courgette and potato soup, pickled courgette with onion etc. I came up with this recipe and it's DELICIOUS :D

Chop up courgettes into chunks
Roll them in mixture of flour, black pepper, grated parmesan cheese
Deep fry in olive/vegetable oil - like chips

Trixiebelle, We have never done any of the above with our courgettes.  Here are some of our recipes.  We slice then lengthways, then marinate in olive oil and lemon juice.  They can then be grilled or fried, but better still, put on the barbie.   My preference is to slice then lengthways, dip in olive oil and lemon then into seasoned cornflour before frying.  We also stuff the round ones the same as we do aubergines.

Hugh Fearnley thing recipe has thinly sliced courgettes fried really really gently for ages in olive oil with lotsa garlic. It turns to a mush which you then tip over bruchetta....mmmmmmmmm slurp!!

Hi ,
  courgettes are lovely if you wash them and slice thinly lengthwise.Put on a plate and sprinkle with salt,then another layer of courgettes and sprinkle with salt.Leave in the fridge for an hour or so.A lot of liquid will have come out.Wash and dry the courgettes well and fry until golden in a little olive oil.Drain on kitchen paper.Take an ovenproof rectangular dish and place a layer of tomato sauce in the bottom then a layer of the cougettes.Cover with more tomato sauce and  grated mozarella ,plenty of fresh basil and a good sprinkling of parmesan.Then repeat with another layer of the same topping with a good sprinkling of freshly grated parmesan.Bake in the oven Gas Mark 5 for around 35-40 mins.
  This recipe is also excellent made with aubergines as the salting removes the bitterness.

You could probably add some nice bacon or chicken if you wanted to 'meatify' it.

Another way of using courgettes is to cut them into small cubes and add them to pasta sauce or chilli con carne.  Stir them in at the last minute and heat until they are warmed through.  Don't let them cook though as they will lose their crunchiness..... mmmm.

Try growing two differently coloured varieties, or trade with neighbours. The visual effect of both yellow and green courgettes in the same dish is stunning, particularly if red peppers, chillies or tomatoes are included.

This is most intriguing, I have grown round ones, Tondo something or other, but never thought of stuffing them. It certainly makes sense considering their shape. I think I have talked myself into growing them again this year  :)

I've not grown round ones, but last year grew 3 diff.coloured ones - really attractive cut into chunks, cored with an apple corer & stuffed. Not too fiddly to do, actually. Cook in a tomato sauce of o/oil toms, garlic, chilli, basil or oregano perhaps, reduce sauce to coat. Oh and the insides got curried. ;D
