Pancetta and Cabbage Pasta

Lazybones

Blooming lovely dinner tonight - wasn't sure from the title but go on, try it....

Fry pancetta and add handful of thyme leaves and chopped clove garlic until soft.
Cook pasta.
Add thinly sliced cabbage (any variety) to pancetta mixture and handful of grated parmesan (I know it sounds strange but do not add anything else) and put lid on and leave on a low heat, stirring once or so, for 5 mins until cabbage crunchy but cooked.
Throw pancetta and pasta together and add handful of mozarella and handful of browned pine nuts and slug of olive oil, season and serve.

Also would taste fantastic without the pancetta if you are veggie or don't fancy it.

That sounds very nice LB, i shall give that a try we like pasta very much at our house, i make up me own recipes on many occasion.

Fancied this but no pancetta and no pine nuts - so used some really nice thick cut smoked bacon from the fridge and just missed out the nuts - still very tasty.  Thanks, would never have thought of using cabbage with pasta!

Glad you enjoyed Wicker.  I wasn't sure about the cabbage and pasta but it really works well.  Also, just a tip - you can freeze pine nuts and just grab them as and when needed.  They taste exactly the same straight from the freezer - just a bit colder.
