You might like to try this one.

Fry 1 chopped onion & 2 crushed cloves garlic in 50grm butter until soft. Stir in 125grm long grain rice & cook stirring for 2 mins. Add 1.3kg grated courgettes & 1.2 litres veg stock & simmer for 20 mins til rice cooked. Stir in 6tblsp pesto sauce season & serve.

This is a very "hearty" soup. I now use less rice than the recipe says as I think its a bit too thick. The addition of pesto is delicious.

I'm up for trying that one  :)  My courgette reportoire is growing fast ..... courgette surprise, courgette whip (only jokin)  ;D
