I've got variegated ivy which has covered a 3ft brick wall nicely and some very shady ground under a hedge, but it's really got a bit out of hand now. Any tips for cutting it back without making it look like a hatchet job?

Just go for the hatchet job... it will re-grow rapidly as the warmer weather approaches. Make sure to cut out any that have reverted to just green completely...
