Broad Bean, Pea and Mint Hummus

Just made this for my lunch, its a good way to use up big broadies  :icon_cheers:

100g Big Broad Beans
100g peas
1-2 teaspoons of sesame tahini
Handful chickpeas or any cooked bean I used cannelli leftovers
1 garlic clove
Olive or hemp oil
Lemon juice to taste
Mint leaves to taste
Salt n Pepper

Drop broadies into a pan of boiling water, bring back to the boil, after 2 mins add the peas and cook for a further 3-5 minutes.

Cool them in several changes of cold water.

Remove skins of beans by squeezing.

Put skinned broad beans, peas, other beans or chickpeas, garlic, tahini and mint leaves into a food processor, blitz, add oil little by little (I drizzled hemp oil in) until you reach the consistency you require.

Add a good squeeze of lemon and season with salt n pepper, re blitz and taste. I ended up using almost half a lemon, and more mint, remember you can add, but you can't take away!! :-)

Had mine on melba toasts, Enjoy

Have you tried to do without removing the skins? I wonder if one would really notice them being included?

Hi Goodlife,

Not tried it with the skins on, I find they tend to be bitter, especially on the big beans, so take em off, if you try it with them on, let me know please.

We took the remainder to a BBQ last night and it was well received as a dip with pringles! :icon_cheers:
