Hi all.. I've searched but cant find recipes for Garlic Sauce and Raspberry syrup.. I will have a big crop of rasps and garlic and hopefully will have many lbs of spare rasps once the jams and jellies are made.. and I love garlic so want to make some into paste to store in tubs - same like we can buy in a tube..

Can anyone help..

I would strongly suggest simply freezing or drying the garlic.  Preserving garlic in jars, especially anaerobically, is risky.  It's not sufficiently acidic to kill any botulism spores.  You can use vinegar, but the acidity reduces over time, with attendant risks.

I've never made garlic paste but if you Google 'garlic paste recipe' you will get as many versions as you want  - there is even one on youtube!

The same applies for raspberry syrup - lots of recipes.

But note that most if not all have a storage life of typically a week in the fridge.  You shouldn't keep it longer, which the commercial ones in jars and tubes allow you to do.

I was looking at freezing so assume just make a paste and freeze!! Also will do some in oil.. more garlic than oil .. ;D
