sausage casserole

I made this with some chipolatas, and the family threw themselves on it! It was cheap, and quick to make and gave some leftovers for lunch :)  Serve it with any veg or nice with rice or tagliatelle.

(for 4)
8 long chipolatas cut in half (or equivalent in small ones)
2 onions,
2 cloves garlic,
handful of chopped bacon
tablespoon of flour
some chopped sweet pepper (optional)
tin of tomatoes
pinch of cayenne pepper or a little fresh chopped chilli (if you like a kick)
pinch of cumin
thyme
sage
1/2 cup beef stock or wine

Brown the sausages then take out of pan and remove excess fat.
Brown the onions then add garlic, and bacon and brown again,
Add the flour, stir thoroughly
put back the sausages and add the rest of the ingredients (chop the tinned tomatoes)
I cooked it 10mins in the pressure cooker then left it open on low for a while but about 30-40 minutes open on the stovetop should also do the trick.

This made a very quick and tasty midweek supper.
