Leftovers "Lunchtime soup"

After Gadget very kindly left a top link to a site for using leftover foods I decided to use their soup suggestion wih my own added bits and bobs.


Last nights dinner was...............

a We make it you bake it tinned meal + mixed frozen veggies and boiled tatters and thick beef gravy.

Ive got used to making home made soups and one of my favs to thicken any soup is raw soup and broth mix from Tesco,it contains Pearl Barley,Yellow Split Peas,Marrowfat Peas and Red Split Lentils.
I soak 200g overnight and add this to the soup,along with any raw veggies in the fridge I have handy.
Last nights extras were a few brussels plus 4 chopped shallots and some shreaded Cabbage.
I then add 1/2 a pint of chicken or beef stock and let it bubble away for 1/2 an hour.


I blitze it steadily leaving it in a "Thicked state",I then try it out on Jude (brave soul) and if it needs loosening up a tad I just add a bit more chick/beef stock.

The link mentioned topping the soups off with cheese or croutons so I use cheese straws as you can crumble a couple in the soup and dip them in as well....scrummy..!!!!!!!!!!!!!!


Plenty of crushed pepper and salt to taste and the jobs a goodun..!!!!!!!!!

had a bowl lunchtime and pleased to report flavour enhanced nicely,will use up remainder tomorrow and see
if its just as tasty.

Great post, we being the frugal type, have been having dinner leftover soup for years but the purchase of a blender has definetly added to the flavour. Just had a leftover stuffed marrow, which included rice, soya mince, onions, tomatoes and peppers, and the soup when zapped turned into a very thin soup - but very tasty
