Thai Sweet Chilli Sauce

Hi all
Just wondered if anyone has a good recipe I can beg from them, as I am soon to have a glut of chillies in my greenhouse.

Chillies do vary in their depth of heat. So it is hard to give an exact recipe. This is approximate and you may want to adjust the sugar, garlic or chili to suit your taste after making the first batch.

One cup of water two cups of sugar.
add a whole clove of garlic,
1 desert spoon of rice vinegar (a fruit vinegar will do instead)
I finely chopped chili

Bring to the boil

Mix one teaspoon of Cornflour (cornstarch for Americans) to a paste with a little cold water
add slowly so that as soon as the mix seems thick enough stop adding.
Cornflour takes 5 minutes to cook out or the sauce will separate when cold.

Take out the garlic clove before leaving to cool.


My suggestion for your glut of chillis is to chop them as finely as you can then freeze them in ice cube trays.

As soon as they are frozen into little blocks then put these blocks into a plastic bag, chuck it in the freezer and make up some more until all your chillis are frozen.

You can then experiment with your sauce making small batches as needed. Commercial sweet chili sauces are filled with preservatives to keep them from going off.
