Boring - & too defined.

For a more subtle flavour, try a couple of sprigs of Tarragon.

Yes and a touch of rosemary can also be used as an alternative

The 'mint' should not be tasted, as mint. It rather like adding a bay leaf to a big stew.

The sprig of mint is supposed to enhance the taste of the potato without being noticed.

I know a lot of people say they can not taste the 'mint'. That is the point. You are not supposed to.

Mint is not mint any more.

There are so many varieties and most do not work at all. In fact some are totally disgusting when added to recipes meant for the plain old fashioned mint.

Mint should have huge leaves and be a reasonably deep shade of green.

It should grow like a weed and need to be in a container to stop it taking over the entire garden.

Put a bit of it in a jar of water and roots will appear within a week.

All these spearmint/applemint etc are not right, they don't work.

A sprig of proper mint in the water as it boils, take it out, then add new spuds. Or fresh peas.

That is British Mint.

It brings out the natural flavour but does not smother it.

Chop it with sugar add to  malt vinegar and serve with lamb.

(lovely on proper chips too)

There are a lot of herbs, spices and sauces which work with potatoes.

Potatoes, like bread, pasta or rice are fairly bland as tastes go.

Comfort foods all. Filling.

Mine was in a bucket on the patio & it still tried to take over. I've pulled about six rather healthy plants out from the cracks between the slabs.

Haven't got any tarragon though.

I was grateful to Tim for this  suggestion, as my French tarragon is growing like a weed for some reason this year.....I thought of it as going only with chicken, and I now know better. Lovely flavour.

Another thing that is growing like a weed is coriander. My parsley has failed this year, so coriander is going into everything, and I love it. Flowers and all.

Coriander?  Mine goes straight to seed.

rosebud

Thank you for that good suggestion Tim. ;D

I'm not too keen minted potatoes..or with other herbs neither..but I just had thoroughly delicious new potatoes with new sweet garlic with butter..loads of it and lovely charlotta potatoes..
To die for..... :P..and my breath sticks to high heaven now... ;D..never mind..

Tim, what seeds do you use for your coriander?  I read on here that the smaller seeds are less likely to go to seed and that it is ok to use the seeds from Indian grocery stores so i have been doing that and our coriander has been much better.  If you would like some seeds, I'd be happy to send them to you if you PM your address to me.
