It's only just come out of the oven (the house smells lovely :) ) so I am forcing myself to let it cool down a little.

It's very easy to make bread once you know how.

Mortality

Where did you get the bread to prove in this cold weather?

Airing cupboard? I wish I had one .. :'(

As to its history it was the name of a character I played in an online game called 'Everquest'
The character 'Mortality Rate' was a female Dark Elf Necromancer, the name seemed apt at the time and has been used alot by me over the years.

I put it on a chair next to a radiator in the kitchen, covered with clingfilm and a tea towel.  It usually takes about an hour, but I completely forgot about it today and left it for at least 3 hours!  It didn't seem to make any difference to the finished result though.

I normally prove mine overnight then you dont need warmth at all

I just make one quantity of dough, then use half for bread and half for pizza.

That sure looks good to me. You look like there are a few more to cater for than I have at our house.

If any one is finding bread hard to make at home HOVIS do a white bread mix which is excellent. It is in a small red bag and ASDA usually have it for 2 packs for £1.00. When they do I stock up.

I get two small loaves or one large, or 4 pizza bases,  out of a pack and to be honest I can not get bread to rise like that mix does. Just add  three quarters of a pint of water and a thingy of butter to the pack.

We do not eat much bread as, sadly, I do not tolerate gluten very well. (severe indigestion among other things) I am not celiac but I know it is wheat because I only get the problems when I eat it.

I usually stick a towel on the double  radiator in the dining room and leave the covered dough to rise on that but if I use the Hovis mix the dough rises on my work top and I don't have heating in my kitchen, it only needs to rise once too. I think it is brilliant. Home made soup and fresh bread is a feast and home made bread toasted is a different taste altogether to that shop bought sliced stuff.

A friend of mine who has a tolerance/allergy problem with certain additives uses Hovis white bread flour and swears by it. It is more expensive than ordinary strong flour I think it is about £2 a bag, may be it is worth trying.  

I do not use a bread machine but do make use of my food processor for mixing, it has a dough hook as one of the alternative attachments. Another gadget which gets used almost every day for something or other.

I used a granary-type flour in the video, today I used strong white bread flour.
