Wonderful selection of courgette recipies

75g butter
200g courgettes, weighed after top and tailing
225g self raising flour
1/4 tsp salt

125 g extra mature cheddar cheese, grated
3 large free range eggs
4 tbsps milk

melt the butter
grate the courgettes and put to one side
stir flour, seasonings in a bowl and add cheese
in a separate bowl, lightly beat the melted, cooled butter, milk and eggs together
add the flourand courgettes and stir until just mixed
put in a 2 lb loaf tin and level the top
bake for 45-50 minutes or untilthe top springs back when lightly pressed

I haven't made it yet but will be trying it next week

Manics, did you ever make this loaf..thinking of making this tomorrow :)

This makes a lovely moist cake

Courgette Cake

8 oz caster sugar
3 eggs
8 fluid oz groundnut oil
8 oz courgettes( unpeeled and grated)
10 oz SR flour
1 oz pine nuts(optional)

Grease a 2 1b loaf tin
Mix  the dry ingredients together(not pine nuts)
Mix wet ingredients together, then add to dry and mix well
Pour into tin and sprinkle on pine nuts

Bake for 1 and 1/4 hours at 190c or 170c fan oven

Following last night's supper, I have to add this to the courgetteopedia.
It was a revelation - at last, a macaroni cheese that daughter Tiny Triff adores. ;D
She doesn't like stuff with thick gloopy cheese sauces, but this tastes much lighter and the pasta doesn't sit in a pool of sauce.

Our variations (owing to the usual problem -- lack of the exact ingredients in fridge / larder)...

penne instead of macaroni
200g special-offer Yeo Valley extra-thick single cream plus a couple of tbs of milk
A teaspoon of provencal herbs instead of all that thyme
A tablespoon of wholegrain mustard instead of the dijon

The toms were Gardeners' Delight, and the courgettes were a mix of colours (one pale green Lebanese, one yellow and one dark green Firenze).

Thanks Yorkshire Lass - a recipe that is short & simple - I was going to say "like me" but mean.... easy for me to follow. Excellent.  :)

Yes, hector,it was really nice. I now have several marrows as we've been on holiday. They are being substituted for cucumber in mustard pickle  ;D
